Our Szechuan Peppercorns deliver a distinctive tingling sensation unlike any other spice. They are excellent in stir-fries and roasted vegetables, and work well when used to season the surface of meats such as beef, poultry, or seafood before grilling or searing. Lightly dry-toasting the peppercorns brings out their most aromatic qualities and depth of flavor. Toast in a dry pan over medium heat for 3–4 minutes, stirring often to avoid burning.

Flavor Profile

Citrusy, aromatic, and lightly peppery with a distinctive tingling, numbing finish.

Uses

Use in stir-fries and classic dishes such as Dan Dan noodles. Add to dry rubs for duck or pork, or incorporate into marinades and sauces for their distinctive citrusy, tingling heat. Use sparingly, as the numbing sensation is pronounced. To bring out maximum flavor, you can either dry-toast whole peppercorns briefly to release their aroma, or grind them and lightly bloom in oil until fragrant before adding to a dish.
