Uses

Add to soups, stews, and sauces for mild herbal flavor. Use with poultry, pork, lamb, and fish. Works well in vegetable dishes, particularly with tomatoes, zucchini, eggplant, mushrooms, and root vegetables. Enhances Italian cooking, pasta sauces, and Mediterranean dishes. Season eggs, omelets, and frittatas, and use in stuffings and dressings. Add near the end of cooking to preserve its delicate flavor. When substituting dried for fresh, use one-third of the amount specified. To release its full flavor, which comes from its essential oils, rub the herb gently before using it as a seasoning, particularly on foods that are not being heated.
