Flavor Profile

Intensely aromatic, sweet, and warming with pronounced spicy-sweet character. Pungent, almost medicinal intensity with eugenol (same compound in dental products). Strong flavor that can easily dominate if overused.

Uses

Stud whole Madagascar cloves into ham, pork roasts, or oranges for both flavor and decoration. Add to pickling brines, mulling spices, and chai tea. Use in stocks, broths, and other slow-cooked dishes, then remove before serving. Stud into onions for classic French cooking, or simmer whole in rice pilaf and biryani. Cloves are potent, so use sparingly. When cooking with whole cloves, remove them before serving, since biting into one can cause sharp pain.
