Uses

Crush juniper berries before using to release their aromatic oils. Use with game meats such as venison, wild boar, duck, and rabbit, and in marinades for pork and lamb. Juniper works well in sauerkraut, braised cabbage, pickling brines, and curing solutions. It enhances beef stews, pot roasts, and braises and is commonly used in pâtés, terrines, and charcuterie. Add to spice rubs for smoked or grilled meats, or use in gin-based cocktails for extra juniper character. Use about 6–8 crushed berries per pound of meat when grilling or roasting.
