Our Dutched Cocoa Powder is alkalized cocoa known for its smooth, mellow chocolate character and dark color. The alkalization process reduces acidity, resulting in a richer, more rounded flavor than natural cocoa. This powder dissolves easily in liquids and performs reliably in both baking and beverages. It is well suited for hot chocolate, chocolate cakes, brownies, cookies, and tiramisu. Dutched cocoa is the standard cocoa used in much of European baking and is favored by many professional bakers.

Flavor Profile

Smooth, rich chocolate flavor with reduced acidity, rounded bitterness, and lightly roasted depth.

Uses

Use in baking and beverages where a smooth, mellow chocolate profile is desired. It works especially well in cakes, brownies, cookies, frostings, ganache, and chocolate sauces, and dissolves easily in hot chocolate, mochas, and other chocolate drinks. Add to pancake or waffle batter, or use in ice cream, puddings, and custards for a rounded cocoa character. For hot cocoa, use 1 to 3 tablespoons per cup of heated milk. Dutch-processed cocoa can also be used for dusting tiramisu, truffles, or cappuccinos.
Note: Because Dutched cocoa is alkalized, it does not react with baking soda the same way natural cocoa does and is best paired with baking powder in recipes.
