The brilliant fire red of this Indian chile may lead you to believe that it's an absolute scorcher.  But the heat is more hugging warmth than burn.  In fact, its scoville score (for heat) puts it roughly on par with the mild poblano.  The Kashmiri performs well in that spot everyday cooks will recognize: when paprika is just too mild and cayenne is one step too far.
