California Bay Leaves are native to the Pacific coast, where they are harvested from the California laurel tree. They have a more potent, eucalyptus-like flavor with a pronounced melon aroma than Turkish bay leaves. Whether you’re pickling, braising, or slow-cooking, these are an excellent choice. Remove the leaves before serving cooked dishes, as they remain tough even after cooking.

Flavor Profile

Aromatic and assertive, with a clear eucalyptus note at the forefront. The flavor has a resinous depth with a subtle sweetness that reads faintly melon-like, balanced by a camphor-adjacent bitterness.

Uses

Use in soups such as chowders, bean soups, and vegetable broths, as well as in stews. Add to sauces, including tomato-based sauces, cream-based sauces, and slow-simmered meat sauces. Use in pickling liquids or marinades to add depth. Ideal in braised dishes and long-simmered preparations like beans or grains, where their flavor has time to infuse. Remove the leaves before serving, as they do not soften during cooking. Because California bay leaves are more assertive than Turkish bay leaves, use about half the amount called for when substituting.
