Moroccan Kabobs with Mint Sauce

Ingredients

  • Caravan Moroccan Spice
  • 2 lbs chicken breasts
  • 1/2 cup greek yogurt
  • 2 limes, juiced
  • 1 red bell pepper, 1" dice
  • 1 green bell pepper, 1" dice
  • 1 red onion, quartered
  • 1/4 cup fresh cilantro
  • 1/2 cup mint leaves
  • 1/4 tsp. Ground Cumin
  • 1/2 tsp. Ground Ginger

  1. Combine cubed chicken, Caravan Moroccan Spice and yogurt. Stir to coat. Refrigerate for 4 hours.
  2. Preheat grill to medium high heat. Thread onion, chicken, red bell pepper and green bell pepper onto skewers in alternating pattern.
  3. Lightly oil grill plate. Place Skewers on grill. Turn skewers one-quarter turn every 4 minutes until internal temperature of chicken reaches 165F.
  4. Make Sauce: place cilantro, mint, cumin, ginger, salt, honey, and remaining lime juice into blender. Blend to combine then slowly add olive oil while blending. Salt and pepper to taste.

Serve with Couscous or Rice. Drizzle mint sauce over kabobs or use as a dipping sauce.
